Chicken Marsala, asparagus, and mostly mashed potatoes


This is a very simple dish that M makes for me when were are feeling hungry. M make this on the boat and it seems very easy with little prep. I'm not sure how to make it but I love to eat it. My favorite part about this meal is the mostly mashed potatoes. The chicken is a mystery but I can help with the taters. Once you eat mashed potatoes this way you will eat them like this forever.

What you need:
potatoes, butter, onion, garlic, salt, crushed red pepper.

Cube the potatoes into 4's and put them into the boiling water for about 15 minutes. Meanwhile, saute some onions and garlic in a pan. After 15 minutes, drain the water and add the caramelized onions, garlic, and half a stick of butter per 6 potatoes. We never have milk on the boat but if you do, add a dash. Mash the mixture with a fork until you feel like stopping. The chunkier the better. Always leave the skins on because these potatoes are about easiness. Salt and crushed red pepper to taste. We usually put a lot of salt in the pot then add some more once it's on the plate. Mix it up and eat. Easy. I never said it was healthy, but it sure is tasty.

Goes well with red wine.
